Stumbling Blocks - Not Losing Fast Enough

If there were a picture of one person in the dictionary to represent the word impatient, it would be mine.  I know, I know... you think you're more impatient than me.  No lie, it is NOT possible.  I get ANGRY and SAD and DEPRESSED when things don't happen fast enough for me.  It's a constant and daily struggle.  The only reason I make it through is by distraction.  Drives me crazy though. This has been especially true during my weight loss journey.  It didn't matter how much I lost during the week, it was never good enough.  I was hard on myself, disappointed, and even got depressed over low loss weeks.  And forget it if I gained weight one week.  Stay out of my way on those weeks or risk losing your head. Patience is key to peace and happiness.  The scale is still going down and I'm currently at a weight I've NEVER been my entire adult life.  At least not that I can remember.  I have learned to take comfort in that. Stumbling Blocks - Stalls

If you're like me you have read TONS of information about losing weight and if anything is consistent, it's the fact that the weight loss stalls as some point.  A true stall can last weeks if not months.  Up to this point, I haven't had one last more than a week so I consider myself lucky.  However, it was still very frustrating.  When you are seriously watching what you eat and sticking perfectly to your plan, AND you're exercising consistently, AND you have changed anything that could affect your weight loss, you should be losing weight right?  Sigh... sometimes your body just hates you.  Seriously. My advice?  Get over it and keep going.  Easier said than done I know but it is truly the only answer.  You'll drive yourself nuts otherwise.  Below I've listed a few reasons or solutions I've happened across but I have not tried any of them no do I recommend any.  Google them and do your own research but understand that EVENTUALLY, even changing nothing yo

BBQ Chicken Pizza

I have always loved BBQ pizza and BBQ chicken is one of my favorites.  I don't know why it never occurred to me to try to make it on my own but it finally did!  So I made it today.  One of the great things about this recipe is you can truly tweak it however you like to suit your own tastes.  I used a mesquite grilled chicken but you can literally use whatever kind of chicken you wanted to... rotisserie, canned, boiled and shredded, whatever.  I also used a sugar free BBQ sauce which helped keep calories and carbs within reason.  I used as little as I could without sacrificing flavor but feel free to add more if you like! BBQ Chicken Pizza BBQ Chicken Pizza Toppings Makes 2 servings Ingredients: 1 Tbsp Chopped onion 1/2 tsp Minced garlic 3 oz Chicken, shredded or cubed 3 Tbsp G Hughes Smokehouse Sugar Free Hickory BBQ Sauce 1 Low carb chicken pizza crust* 1 oz Mozzarella cheese (about 4 Tbsp) 2 Tbsp Sour Cream 1 tsp Cilantro or Parsley, chopped

What's my secret?

People ask me all the time how I've done it.  How have I lost all this weight?  Yes, the simple answer is diet and exercise but that is truly simplifying it.  In some ways, it's been so easy!  In others, it's been the hardest thing I've ever done. So what's my secret?  It's all in my head.  I had to be motivated and then make up my mind to do it.  No cheating.  No short cuts.  Only I have control over my weight and only I can change it.  What I put in my mouth is up to me.  What activities and exercise I do is up to me.  Will power and determination have become my bitches... LOL!  Food and laziness don't control me.  Circumstances don't control me.  If you can accept that and make up your mind that losing weight and getting in shape are more important than food or whatever it is that makes it hardest for you, then you can do this. My mother taught me a lesson once and it's really stuck with me over the years.  I doubt she'd remember but I'

Blackened Fish Tacos with Cilantro Slaw

I am sooooo excited about this recipe!!  It's still a bit of a work in progress but I will update this as I make changes (if I do).  It was pretty good just like this regardless! I topped mine with homemade ranch dressing but the recipe suggests cilantro lime sauce .  I haven't made it yet so couldn't use it.  I may try to make it and have it on leftovers tomorrow.  It looks amazing though it's a bit more calorie dense than my ranch. I also made some adjustments to the original recipe that I was using regarding serving sizes.  I've included my macros but I would suggest you calculate your own.  It will vary depending on many things including your tortillas. Low Carb Tortillas

One of things I've missed the most is tortillas for burritos or tacos or whatever.  Happily, this recipe works pretty well as a replacement!  They don't really taste like tortillas because they're not really like bread but they're not bad.  I made them tonight and did a breakfast burrito (turkey sausage and scrambled eggs).  They were good!  Tomorrow I think I'll try some fish tacos!  :)  I will probably make these again but they make a lot so I may have to half the recipe. I will say that these weren't easy to make at first.  You need to make them very thin which makes them a challenge to flip.  I had to get the heat just right on my stove and make sure I let them cook long enough on one side before trying to flip them.  I completely messed up the first one and had to throw it away.  The second worked better but I tore it so couldn't use it for a shell so just ate it by itself.  LOL... tasty.  Once I got the hang of it though, they weren't difficult a
