Sausage Pinwheels

I'm so excited!  I found this great recipe which is perfect for a snack, breakfast, appetizers, or even just for a meal.  And they taste great!  It was a little labor intensive this first time but I'm sure it'll be easier next time.  I made these, ate three, and will be freezing the rest.  Although I may have to have a repeat meal tonight.  They're that good!

Sausage Pinwheel

Ingredients
  • 3/4 cup Almond Flour
  • 2 Tbsp Coconut Flour
  • 1/2 tsp Baking Soda
  • 1/2 tsp Baking Powder
  • 8 oz Shredded Mozzarella Cheese
  • 6 oz Cream Cheese, separated
  • 1 large Egg, beaten
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Onion Powder
  • 8 oz Turkey Sausage, Browned
  • 1/2 cup Shredded Monterey Jack Cheese
Instructions
To make dough:1. Add mozzarella and 2 oz cream cheese to a microwave safe bowl. Melt together until they are soft enough to blend them together with your spoon. Start with 1 minute and stir. If it's still stiff then return it to the microwave for 15-20 seconds until smooth. 2. Add dry ingredients, the egg, and spices to the melted cheese and stir well. Be sure all the dry ingredients are incorporated into the cheese. Using hands make this easier. If the dough gets stiff while working with it, microwave 15-20 seconds to loosen it up.3. If the dough gets stiff while working with it, microwave 15-20 seconds to loosen it up.4. Set dough aside and cover with plastic wrap.To make the filling:5. Brown the sausage and drain. Add 4 oz of cream cheese and melt with sausage over low heat. Stir often. Let mixture cool completely.6. To make the pinwheel roll the dough out into a rectangular shape. The dough should be about 1/8 - 1/4 inch thick when done.7. Spread the sausage mixture evenly over the dough and top it with the 1/2 cup of Monterey Jack Cheese.8. Roll the dough with mixture as tight as possible.9. Cover the roll with plastic wrap and chill in the fridge for at least 30 minutes.10. Cut the roll into 24 slices.11. Bake at 400 degrees for 12-14 minutes.Notes: You can freeze the pinwheels before or after cooking. If freezing them before cooking, lay them flat and freeze for about 30 minutes then place them in an airtight freezer bag. To cook them, no need to thaw. Simply cook them at 400 degrees for 16-18 minutes. If freezing them after cooking, let them cool completely then place in an airtight freezer bag. To cook them, let them thaw for a few minutes then heat at 400 for 6-8 minutes.
