One of things I've missed the most is tortillas for burritos or tacos or whatever. Happily, this recipe works pretty well as a replacement! They don't really taste like tortillas because they're not really like bread but they're not bad. I made them tonight and did a breakfast burrito (turkey sausage and scrambled eggs). They were good! Tomorrow I think I'll try some fish tacos! :) I will probably make these again but they make a lot so I may have to half the recipe.
I will say that these weren't easy to make at first. You need to make them very thin which makes them a challenge to flip. I had to get the heat just right on my stove and make sure I let them cook long enough on one side before trying to flip them. I completely messed up the first one and had to throw it away. The second worked better but I tore it so couldn't use it for a shell so just ate it by itself. LOL... tasty. Once I got the hang of it though, they weren't difficult at all!

| Makes 12 servings of 1 tortilla each |
| Ingredients: |
| 8 large | Egg whites |
| 1/3 cup | Coconut Flour |
| 10 Tbsp | Water |
| 1/4 tsp | Baking powder |
| 1/4 tsp | Garlic powder |
| 1/4 tsp | Onion powder |
| 1/4 tsp | Chili powder |
| 1/4 tsp | Salt |
| Instructions: |
| Add egg whites, coconut flour, baking powder, and water in a bowl. Combine well (should be a uniform, watery mixture). |
| Optional - Seasonings are optional but if using, add and mix. |
| Heat a skillet (any size you want your tortillas to be) to low heat (#3 on my stovetop). Wait until the pan is hot, spray with cooking spray, and drop some of the mixture into the center (I use a 1/4 measuring cup that's not quite full). |
| As quickly as possible tilt the skillet on all edge to spread the batter as thin as possible. You can always add more in the areas not covered. |
| Allow it to cook for a couple of minutes until it starts to rise/bubble or you lift it up and the other side has browned. Flip and cook for an additional minute. |
| Repeat process until all the batter is cooked. |
| TIP: If your first tortilla doesn't spread thin enough on the skillet (comes out more like a pancake) add more water to the egg white mixture and mix! |
