Salad Dressings

When I first started my new way of eating I just tried to choose the best dressings off the shelf at the grocery store.  There are some good choices of decently low carb dressings but do make sure you look at the labels and ingredients.  One thing I learned is that reduced fat or fat free dressings tend to have more carbs.  So be aware of that when making your choices.  And remember, healthy fats are not only a good thing but you need them. I've only found one homemade dressing I like so far but this one knocks it out of the park! Easy Keto Ranch Dressing The recipe calls for 2 Tbsp of water if you want to thin the dressing a bit.  When you refrigerate the dressing, it will thicken.  I added the 2 Tbsp the first time I made it and while I loved the flavor, I wanted it thinner.  So the second time I made it I added 3 Tbsp of water.  It's still thicker than I want it so when I make it again, I'll probably add 4 Tbsp of water.  Eventually...

Chicken Salad

I love chicken salad.  LOVE it.  And there are so many different ways to make it.  I've had many different ones that I liked.  But being on a low carb diet means I can't eat traditional crackers or bread which is how I liked eating my chicken salad.  But I've evolved and learned I don't have to have that.  Today I created a new chicken salad which tasted delicious all on it's own.  I thought about serving it on a bed of lettuce with some sliced tomatoes but was too impatient.  LOL! LOVE salads.  My favorite salad by far is a Cobb salad with a few modifications for my personal taste.  The only warning I'll give on salads is to be careful to track EVERYTHING you put on it.  I weigh every single item I add to my salads.  You can easily accidentally go over your carb count or if you're tracking calories, your calorie count too.  Especially with salads that have higher calorie ingredients.  And the dressing... be careful!
