Parmesan "Tater Tots"


Many websites will tell you cauliflower is a great sub for potatoes.  Well, I have to strongly disagree but only because of taste.  The texture is great and you can truly make many of your favorite potato recipes with cauliflower.  But to me, the flavor is entirely different.  That being said, as long as you're not expecting potatoes, these little tots will not disappoint!  I was really impressed by them!  I made one full recipe which turned out to be about 20 tots so I froze what I didn't eat tonight (I'm only cooking for me).  Perfect for a quick meal another time!  If you decide to try them, let me know what you think!

Parmesan "Tater Tots"
Adapted from THIS recipe.
Ingredients
  • 2 cups Riced Cauliflower
  • 1 Tbsp Green Onion, Finely Minced
  • 1/2 cup Parmesan Cheese, Grated
  • 1 large Egg
  • 1/2 cup Pepper-Jack Cheese, Shredded
  • Salt and Pepper to taste
Instructions
1. Thaw cauliflower if frozen. Drain as much water from it as possible.2. Place cauliflower in a bowl and mix in onion, Parmesan, and pepper-jack cheese.3. Taste and add salt and pepper as needed. Mix in the egg.4. Let stand for 15-30 minutes.5. Form 'dough' into tot shapes then place on a baking sheet lined with a silicone mat. Then place in freezer for about 20-30 minutes. Place any tots you don't plan to use in an airtight freezer bag and save for another meal.To cook in air fryer:6. Temperature should be 360. Cook for about 15 minutes.To fry in oil:7. Pour enough oil in a pan to cover the bottom of the pan. Heat through on medium heat. Cook for about 5 minutes on each side or until golden brown.8. Drain on a paper towel.
