I'm slowly migrating all my existing recipes to a new site.  You can find it by clicking the photo below!  This blog will continue to exist but will be more about my personal journey... sort of an online journal.  I probably won't post a lot more here because I would much rather blog about recipes than how much I've lost (85 lbs to date) or the challenges I still face every day.  LOL!

Low Carb No Bake Cookies

On one of the Keto FB groups I frequent, I asked for dessert or sweets recipes that actually tasted good.  So many just don't.  This is one of the recipes that was suggested and I honestly like these a whole lot more than I expected!  I'm not a big fan of coconut because of the texture but this was really fine coconut so not the same.  I made it with almond butter but think I'll try real peanut butter next time.  The picture below is from the site of the original recipe.  I didn't take a picture of mine because while they tasted great, they were really flat and didn't look great.  LOL!  Anyway, simple recipe, tasty, and freezable.  What's not to like? Parmesan "Tater Tots"

Many websites will tell you cauliflower is a great sub for potatoes.  Well, I have to strongly disagree but only because of taste.  The texture is great and you can truly make many of your favorite potato recipes with cauliflower.  But to me, the flavor is entirely different.  That being said, as long as you're not expecting potatoes, these little tots will not disappoint!  I was really impressed by them!  I made one full recipe which turned out to be about 20 tots so I froze what I didn't eat tonight (I'm only cooking for me).  Perfect for a quick meal another time!  If you decide to try them, let me know what you think! print recipe Parmesan "Tater Tots" by September-6-2017 Adapted from THIS recipe. Cheesy Bacon Chicken Nuggets

I thought I was done with chicken nuggets forever when I decided to go low carb.  Then I found this recipe!  I was so proud of myself for doing it!  This recipe was a bit labor intensive this first time but now that I know what I'm doing, it'll be much easier next time.  And let me assure you, there WILL be a next time.  I made one recipe but it was enough for 25 nuggets.  I cooked one serving and froze the rest.  So yes, labor intensive tonight but 4 more servings ready to go in the freezer!  Yay!  Click the picture below to see the original recipe.  I used an air fryer to cook my nuggets... love that thing! print recipe Cheesy Bacon Chicken Nuggets by September-6-2017 Adapted from THIS recipe. Breading Ideas for Low Carb Diets - Pork Rind Breading

I'm not huge on fried foods so haven't really missed them that much.  However, I have kept my eyes out for a batter recipe to try.  In addition to a good batter recipe, I wasn't crazy about dealing with all the oil and calories from using oil for frying.  So as I said, I wasn't that concerned about it.  That being said, I've been reading up on air fryers and thought they might be a great idea so I finally bought this one today.  And I decided to try a pork rind breading.  It was good!  Not great but good! So anyway, I found this website that had several different breading ideas and will be trying them all.  First up as I mentioned was the pork rind breading.  I used it to make fried pork chops and zucchini in my new air fryer!  I was impressed with both the breading and the fryer!  I look forward to trying them both again. So excited about this one!  I love veggies and I love them fried but in the interest of keeping carbs and calories down, I don't usually fry anything.  However, I just bought this air fryer so figured I would start trying out some different fried foods and see how it went.  I used a pork rind breading for this recipe which was pretty good!  And of course, I also used the air fryer.  Not bad at all! YUM!  (pictured with fried pork chops ) Fried Zucchini Makes 2 servings Ingredients: 5 oz Zucchini 1 large Egg 3/4 cup Pork Rind Breading Instructions: Slice zucchini. Whisk egg. Dredge zucchini in egg and then breading. To cook: In an air fryer, cook at 360 degrees for 14 minutes. In an oven, cook at 350 degrees for about 20 minutes. -MACROS- calories fat protein carbs net carbs 95 5 8 2 2 Macros can be different based on your specific measurements and ingredients.  Please calculate your own macros rather than depend on these!

Fried Pork Chops

I'm a big fan of pork chops!  They are full of flavor, low calorie, and of course, no carbs!  I bought a pack of boneless chops a few weeks ago and froze them in packs of two.  I used my last two to make dinner tonight and they turned out pretty good!  I used this pork rind breading and an air fryer... easy and delicious! Pictured with Fried Zucchini Fried Pork Chops Makes 2 servings Ingredients: 10 oz Boneless pork chops 1 large Egg 1/4 cup Pork rind breading Instructions: Whisk egg in a bowl. Pour pork rind breading on a plate. Dredge pork chop in egg and then coat with breading. To cook: In an air fryer cook at 360 degrees for 14 minutes. In an over, cook at 350 degrees for about 20 minutes or until done. -MACROS- calories fat protein carbs net carbs 251 10 37 1 1 Be sure to calculate your own macros since it will vary based on your own measurements.

New Kitchen Gadget!

I'm SOOOOO excited about this!!  I've been wanting to try an air fryer and I got one today!  I was so excited to get to try it out tonight when I made fried pork chops and fried zucchini .  Yummy!! Air Fryer Pork chops and zucchini before cooking. Pork chops and zucchini after cooking on 360 for 14 minutes! It was so simple to figure out and so easy to clean!  No oil, no mess!  WOW!  And so many less calories!  With me following a low carb diet, it's also important to me to keep my calories as low as possible so fried foods were pretty much out for me until now.  Can't wait to keep experimenting with this amazing new kitchen gadget!

Sausage Pinwheels

Stumbling Blocks - Muscle Weighs More than Fat

So yea... the scale is not always the best way to measure your FAT LOSS.  When we say we want to lose weight, what most of us really mean is that we want to lose fat.  I'd be perfectly happy weighing 180 if that weight was from muscle rather than fat.  Well... as long as I didn't look TOO muscular.  I'm not a fan of looking like a body builder.  But I digress... I've been working with a personal trainer for months and in that time, I know I've gained muscle.  I can see it.  So the scale hasn't gone as far as it would have if I hadn't gained muscle.  BUT that extra muscle helps me burn fat faster so it's worth it! OMG... it's all so confusing when you try to think about it.  Bottom line, eat better, exercise more.  Use the scale but also measure yourself!  The shape of your body will be changing and that matters as much as your actual weight... if not more so.  DON'T be discouraged by the scale if you know you're gaining muscle.  That i
