On one of the Keto FB groups I frequent, I asked for dessert or sweets recipes that actually tasted good. So many just don't. This is one of the recipes that was suggested and I honestly like these a whole lot more than I expected! I'm not a big fan of coconut because of the texture but this was really fine coconut so not the same. I made it with almond butter but think I'll try real peanut butter next time. OMG this was SO good!! To celebrate my daughter's birthday I cooked a special dinner for her tonight. She loves zucchini noodles (zoodles) as do I so I started searching a few days ago for just the perfect recipe. What I came up with was a combination of basically three different ones! So this is a bit labor intensive but you don't have to do it all at once if you don't want to. I didn't. I made the sauce and zoodles in the early afternoon then at dinner time, all I had to do was saute the shrimp and heat up the zoodles and sauce. So easy! LOVE salads. My favorite salad by far is a Cobb salad with a few modifications for my personal taste. The only warning I'll give on salads is to be careful to track EVERYTHING you put on it. I weigh every single item I add to my salads. You can easily accidentally go over your carb count or if you're tracking calories, your calorie count too. Especially with salads that have higher calorie ingredients. And the dressing... be careful!
