On one of the Keto FB groups I frequent, I asked for dessert or sweets recipes that actually tasted good. So many just don't. This is one of the recipes that was suggested and I honestly like these a whole lot more than I expected! I'm not a big fan of coconut because of the texture but this was really fine coconut so not the same. I made it with almond butter but think I'll try real peanut butter next time. OMG this was SO good!! To celebrate my daughter's birthday I cooked a special dinner for her tonight. She loves zucchini noodles (zoodles) as do I so I started searching a few days ago for just the perfect recipe. What I came up with was a combination of basically three different ones! So this is a bit labor intensive but you don't have to do it all at once if you don't want to. I didn't. I made the sauce and zoodles in the early afternoon then at dinner time, all I had to do was saute the shrimp and heat up the zoodles and sauce. So easy! I thought I was done with chicken nuggets forever when I decided to go low carb. Then I found this recipe! I was so proud of myself for doing it! This recipe was a bit labor intensive this first time but now that I know what I'm doing, it'll be much easier next time. And let me assure you, there WILL be a next time.
