Trucking along! I'm about to go back to work (I'm a school librarian) so my daily routines are about to change. Hoping for positive changes but we'll see!
On one of the Keto FB groups I frequent, I asked for dessert or sweets recipes that actually tasted good. So many just don't. This is one of the recipes that was suggested and I honestly like these a whole lot more than I expected! I'm not a big fan of coconut because of the texture but this was really fine coconut so not the same. I made it with almond butter but think I'll try real peanut butter next time. The picture below is from the site of the original recipe. I didn't take a picture of mine because while they tasted great, they were really flat and didn't look great. LOL! Anyway, simple recipe, tasty, and freezable. What's not to like? Left and right have chocolate added. The middle is plain but YUMMY! print recipe Low Carb No Bake Cookies by September-7-2017 Adapted from THIS recipe. Ingredients 2 Tbsp Butter 3/4 cup Peanut Butter 1 cup Unsweetened All Natural Shredded Coconut...
OMG this was SO good!! To celebrate my daughter's birthday I cooked a special dinner for her tonight. She loves zucchini noodles (zoodles) as do I so I started searching a few days ago for just the perfect recipe. What I came up with was a combination of basically three different ones! So this is a bit labor intensive but you don't have to do it all at once if you don't want to. I didn't. I made the sauce and zoodles in the early afternoon then at dinner time, all I had to do was saute the shrimp and heat up the zoodles and sauce. So easy! I forgot to sprinkle with Parmesan because I couldn't wait to dig in! So here is my adaptation of all these recipes. Links to the originals are within these directions. Shrimp Alfredo Makes 4 servings (1 cup zoodles, 1/4 cup sauce, 3 oz shrimp) Ingredients: FOR SAUCE (makes more than you'll need): 6 Tbsp Unsalted butter 1 cup Heavy cream 1/8 tsp Grated nutmeg Pinch Salt 1/2 cup G...
DISCLAIMER: I am not a doctor, trainer, or any other kind of professional in regards to a ketogenic diet. Everything you read below is based on my personal research and opinions. Lack of Hunger: One of the aspects of a keto diet that really surprised me was how I wasn’t hungry anymore. A big part of my reluctance to diet in the past was that being hungry was HARD! I’m one of those people that get “hangry” and nobody wants to be around me - including me! But the natural way of a keto diet is that your appetite lessons! I’m NEVER hungry while living the keto life. And if I am, I eat! It’s that simple Why this was the best choice for me: In the past, the diets I have tried worked but were just difficult to follow and it was easy to cheat on them. With keto, it’s easy to follow. Cheating on a keto diet could be easy but if you are committed to the lifestyle, it gets easier. I truly shocked myself with how small my po...
