Trucking along! I'm about to go back to work (I'm a school librarian) so my daily routines are about to change. Hoping for positive changes but we'll see!
I thought I was done with chicken nuggets forever when I decided to go low carb. Then I found this recipe! I was so proud of myself for doing it! This recipe was a bit labor intensive this first time but now that I know what I'm doing, it'll be much easier next time. And let me assure you, there WILL be a next time. I made the sauce and zoodles in the early afternoon then at dinner time, all I had to do was saute the shrimp and heat up the zoodles and sauce. So easy! I forgot to sprinkle with Parmesan because I couldn't wait to dig in! So here is my adaptation of all these recipes. Links to the originals are within these directions.
